Why does hot oil not burn food, but a hot pan does?
We use cooking oil to prevent the food from burning. But someone tell me why the hot oil doesn’t burn the food like the hot pan does.
The hot pan localizes the heat on one part of the food , the hot oil spreads the heat out. The hot oil also circulates to provide a more even heat.
If you leave something in a deep fryer it will burn, but its an all-over burn.
