restaurant recipe secret revealed? How?
We ate at Maggiano's Small Italy in Boston the other night. It was a celebration with food (a marriage) and their house salad is better than ever. How do I get the recipe? If I succeed, I will have the most pleased husband (who is pleased, but imagine a more pleased, or more pleased!)
Ingredients: Salad 5 cups of romaine lettuce, bite-5 cups iceberg lettuce, bite-size pieces 1 small red onion, peeled and sliced 4 ounces blue cheese, crumbled corn oil, for frying 4 oz prosciutto sliced, cut into 2 inch squares For the vinaigrette 1 tbsp Dijon mustard tablespoons water 2 teaspoons granulated sugar 3 / 4 cup 2 tablespoons tsp garlic, minced 1 / 3 cup red wine vinegar 1 tablespoon vegetable oil 2 cups salt, freshly ground black pepper ground pepper to taste 1 pinch dried oregano 1 In a large deep skillet, heat 1/2-inch oil corn. Add ham and cook until it becomes dark brown curls and the ends. Drain on document towels. Cool and fall to pieces into small pieces. 2 For the vinaigrette in a medium bowl, Combine mustard, sugar, water, garlic, vinegar and salt. Beat until smooth. Whisk the oil into the net. Add pepper and oregano and whisk to blend. Adjust seasoning to taste, add more sugar or garlic, if necessary. 3 Place the lettuce, onions, cheese and ham in a large bowl, mix. Add enough dressing to lightly coat the leaves, mix and serve immediately. Refrigerate 4 extra dressing in an airtight container for future use.
