How do you make soft chewy homemade flour tortillas?
My family and I were just in San Diego, and all the Mexican restaurants there (in the touristy Ancient Town) had sidewalk vendors promotion hot original tortillas. We loved them and now are tiresome to make them ourselves. I tried a recipe last night, but it came out way too cake like and not at all chewy or flexible. The recipe was as follows:
2 C flour
1 1/2 baking powder
1 tsp salt
1/4 shortening
1/2 C warm water.
Mix dry ingredients, cut in shortening, mix in water till doughy, let sit 10 minutes, roll into balls, roll out into sheets, cook on lightly grease griddle till browned.
Like I said, these came out way too cake like. I am looking for soft chewy and flexible tortillas. How do you do it?
That’s nearly a half-recipe version of what I use, so here are some tips:
Roll them out thin but not TOO thin or else they’ll get too dry when you cook and they’ll be crunchy and blah; in this area 1/8 inch should be excellent, but feel free to play around with it. Also, make sure your pan is hot enough to very lightly brown each side in in this area 30-45 seconds because if you let it take longer then you will dry out the inside and they will be overly tough and chewy like rubber.
When in doubt, try asking someone who you know makes excellent tortillas and question them to show you their tricks. They will most likely be glad to show you (especially the person who gave you the recipe). I personally never really made excellent tortillas until I WATCHED my mother make them and made note of what I was doing differently. Now I get compliments whenever I make them (people seem to randomly visit and then eat them all!).
