Cooking with beer is a tradition in Belgium of a number of years. The craze is now spreading worldwide. Some beer recipes, which celebrates Carbonnade Flemish Belgium.
One Flemish stew
Ingredients:
1 ¼ pound lean ground beef Chuck
3 tablespoons unsalted butter or margarine
¼ cup all function flour
2 cloves garlic, minced
2 cups chopped original or frozen, chopped
2 3-inch springs original thyme, or ½ tsp Tea of dried thyme, crumbled
¼ c. Tea freshly grated nutmeg
1 ½ pounds of potatoes, red skin, washed and cut into pieces 1 ½ inches (not peeled)
1 can beef consommé © – 10 ½ oz
1 package frozen asparagus cuts (do not thaw)
12 oz Beer can be mixed with 3 tablespoons all function flour
Salt and pepper
Instructions:
Hamburger ground as large and flat – drag to both sides in flour.
Heat butter in Dutch oven medium-high heat for 1 minute.
Add Sol Patty – Brown 3 minutes on each side
Place patty on a plate and set aside.
Reduce heat to medium.
Add onion, garlic, thyme and nutmeg drip and jumped © (3 minutes).
Add the potatoes and eaten ©.
Bring to a gentle boil.
Place lid askew and cook for 15 minutes.
Add the beer mixture and cook until the liquid thickens (in this area 3-5 minutes).
Add meat, breaking into large tufts.
Cover and cook 10 minutes more.
Add asparagus and cook, breaking up frozen chunks, until the potatoes are tender and the meat shows no sign of pink (7-10 minutes).
Remove the thyme sprigs.
Season to taste with salt and pepper.
Pour soup in bowls.
Chocolate Stout
Ingredients:
¼ cup cocoa powder, pans and dust Cooking
2 brushwood butter or margarine
1 large cup or Porter
2 / 3 cup low Dutch process cocoa powder dark
Salt 1 teaspoon small
2 cups unbleached flour
2 cups sugar
1 ¼ teaspoon baking soda soda
2 eggs, extra-large
½ cup sour cream
Instructions:
Preheat oven to 350 degrees.
Dust lightly greased 2 8-inch pans with cocoa powder.
In a saucepan or microwave, melt the butter, beer and cocoa powder until butter melts. Cool.
Sift dry ingredients, add the mixture of beer, cocoa and beat thoroughly at medium speed for 1 minute.
Add eggs and sour cream and beat at medium speed for 2 minutes.
Pour batter into set pans and bake at 350 degrees for 24 to 30 minutes.
Place pans on a rack to cool.
Spread each layer with a thin chocolate frosting.
Stack layers and cover sides with frosting.
Serve.
Citrus Lager Marinade (ideal for fish or chicken)
Ingredients:
1 ½ cup beer
1 tsp Tea cracked black pepper
2 cloves garlic, peeled and chopped
1 stalk lemongrass
Pinch of salt
Instructions:
Lemongrass Slice lengthwise and remove and discard the stem center abroad, fibrous husk.
